We are leaving for Vegas tomorrow, so last night I was trying to get creative with the ingredients in our fridge that would be bad by the time we get back on Tuesday. I found some chicken breast; I have been so over chicken boob lately. As far as veggies went I had some kale from last weeks trip to the market. Off to the pantry to see what I had to make those boobs less boring. Ah hah, low and behold a jar of Bombay Indian Curry simmer sauce that I got at Whole Foods.
First I chopped up some onion and yellow bell pepper to saute with the kale.

Then I washed and chopped the kale.

Time to get the chicken ready, think I'll ad some mushrooms and peas.


I sauteed the mushrooms, next I added the chicken, then the sauce and finally the peas.

It was damn good. I have noticed that when I'm forced to use up what we have left in the fridge it turns into a great meal!

I am good at foraging in my fridge also. Sounds delish and I've been craving Indian food. Thanks for the nice recipe. Have fun in Vegas! It's a dry heat, but still hotter than you know where.
Have fun in Vegas... don't forget about eating a hot dog for me... and make Chris and Bobby get squeezy cheese on theirs... You know, foraging in the fridge is a talent I do not posess... This will come as a surprise, but I like to plan our meals weekly, make a list, arrange them in the order in which I'll be serving them, etc... I know... shocking...
